Bánh by Lauren began in 2020 as a pandemic-era pop-up by pastry chef Lauren Tran, formerly of Gramercy Tavern, selling boxes of Southeast Asian-flavored French pastries. With husband Garland Wong she opened a storefront at 42 Market Street in Manhattan's Two Bridges neighborhood in June 2024, and The New York Times named it one of the 22 best bakeries in the US that year.
